Biscuits and Gravy

This southern staple is something I never grew up eating, and in fact the first time I had it was today.  After a long hard week of many ups and one big down I found myself in the kitchen.  Friday night I made some of my easy-mode cheesy scallion drop biscuits to go with some salmon and veggies.  I guess rice would have been more fitting for that dinner, but I needed to cook.  So I made biscuits.  In my haste I did not cut the recipe in half, so we ended up with way too many biscuits.

Shrimp and Linguica Pot Pies

We are on a tight budget nowadays.  Basically, this means I am trying to empty the freezer of all goods before buying any new proteins.  I tend to save everything.  I really never toss extra food out.  So what this means is there is a lot of random food in the freezer.  This recipe came to be because I’ve had a half sheet of puff pastry in my freezer for a few months now.  It’s been sitting there waiting to be made into a Salmon En Croute, but I don’t see myself spending the coin on fresh salmon for a few months so I needed to come up with something else.

I poked further into the freezer and saw a little over a half of pound of shrimp, along with random sausages and of course plenty of turkey, chicken, and seafood stock.  So I went onto epicurious.com with an idea for a pot pie.  I figured I could find something to do with shrimp or sausage.  I got lucky and found this gem of a recipe for Shrimp and Andouille Pot Pies! Of course I did not have Andouille sausage so I subbed in some Linguica instead.  To make this recipe work for us I halved it, used onion instead of leeks, added carrots, celery and most importantly used homemade seafood stock.  Stock is another godsend of my frugal powers.

Potato Pancakes (Latkes)

Every time my dad goes to Chicago to visit his family he always comes home with Kielbasa Czosnkowa Sausage (Polish Sausage).  This sausage has always been such a treat to me.  I decided to barbecue one link and serve it with some tasty potato pancakes (Latkes).  These Latkes are so nice because they can be made in advance and reheated in the oven.  They make a great appetizer or a side dish to so many meals.  Enjoy!

Sausage Stuffing

Yum… Stuffing has always been my favorite part of Thanksgiving.  My recipe is a combination of my Mother’s and my Aunt Brenda’s recipe.  Its actually a very simple common stuffing, but I just adore it and never seem to try any other recipes when it comes to turkey day.

Empanadas

Empanadas! I love finger foods. I mean, who doesn’t love a little bite of joy! The problem with so many appetizers or finger foods is that they are heavy on the crust or dough (bagel bites, etc), and low on the flavor, and the filling. I’m not sure exactly where the idea for these came from, but the idea of being able to roll out thin layers of dough, and wrap inside that a super savory supply of tastiness. Well, I couldn’t resist!
