I won’t be making my turkey till later this weekend, or maybe even the following week.  This year we are heading over to my future in-laws for a Thanksgiving feast on both Thursday and Friday.  So I am thinking I won’t get around to doing our turkey day till January as we might be on turkey overload by the end of this weekend.  I love to make my own because I get to keep the carcass and make stock.

Potato Pancakes (Latkes)

Every time my dad goes to Chicago to visit his family he always comes home with Kielbasa Czosnkowa Sausage (Polish Sausage).  This sausage has always been such a treat to me.  I decided to barbecue one link and serve it with some tasty potato pancakes (Latkes).  These Latkes are so nice because they can be made in advance and reheated in the oven.  They make a great appetizer or a side dish to so many meals.  Enjoy!

Potato Onion Gratin

This dish is always a hit.  I made it for both Christmas Eve (double batch), and Christmas Day (single batch).  This goes well with Ham, Beef, and Turkey.  Enjoy.

Mashed Potatoes

I have never been a huge fan of mashed potatoes around Thanksgiving time, I myself prefer to fill my belly with stuffing. Yet, we all know that Mashed Potatoes are a staple of almost every holiday feast!  This recipe can be made with or without the hard boil eggs, I find adding them gives them a different and welcome texture.
