I won’t be making my turkey till later this weekend, or maybe even the following week.  This year we are heading over to my future in-laws for a Thanksgiving feast on both Thursday and Friday.  So I am thinking I won’t get around to doing our turkey day till January as we might be on turkey overload by the end of this weekend.  I love to make my own because I get to keep the carcass and make stock.

Turkey Brine

It’s that time, it’s Thanksgiving – and what better to cook up than a big, juicy turkey! Now you probably already know how to make a turkey (if not, I’ll be posting one soon), but I believe that you should ALWAYS brine your turkey. It makes for a little bit more of a mess, and a little more planning, but the end result is so much juicier and succulent than you could imagine!

So for the turkey I decided to brine it for about 16 hours, and then bake it filled with aromatics.  The brine is so worth it, my turkey came out so juicy.  I highly recommend everyone trying this at least once.
